Blue Berry Cobbler and Camping

Today was a pretty good day as far as work days go. I had a slimfast for breakfast for 4pts because I woke up suuuuuper late. I didn't even drink it until I got into work at 9.

Work was a little on the lonely side because I was the only one in the center for most of the day. One of our clients brought goat milk for us so I got a 1/2 gallon of freshly pasteurized goat's milk to try! It was really exciting- and delicious. I only tried a little because I guarantee- this is not fat free!! But it's an experience so whatever. I'm having some for breakfast tomorrow! Also- it was freezing in the center all morning and I couldn't get the air to shut off. I resorted to holding the hot lava lamp in my lap to keep warm.
Fresh goat milk from our sweet clients!

For lunch, I had PB&J that Matt packed for me. I could taste the extra love he put in :). 4pts- it was on WW bread (1pt), with 1 Tbsp pb (2pts), and 1 Tbsp plum jam (1pt).

This was able to hold me over until our awesome dinner and camping planning session. Matt grilled Bratts and I made mac n cheese (I know, I'm gourmet like that). The bratt was 9pts (ouch) and the mac-n-cheese 5pts. I also made blue berry cobbler (healthified a little) and had 1 1/2 servings 5pts.

Jamie Cobbler! I told Jamie that this reminded me of her. I made 1/2 of a small recipe so its tiny.

We still haven't reached a verdict on 4th of July camping. Its hard to pick here to camp when its your first time camping in a new state. In AR and TN, we'd be fine and know exactly where to go, here its a little more difficult to pick. Let me know if you've ever been camping in VA and have suggestions!!!! We need to reserve a spot by tomorrow pretty much. I'd like to fish if at all possible!!!

  1. Hi Casey-

I heard about your blog through my brother, Alec. You guys work together at Learning RX. Anyway, I just wanted to say hello. Our weight loss goals are pretty similar, and I heard you are training for the women's 4 miler. I am as well! I'm always looking for new walking/running buddy. I don't have a blog, but if you'd ever be interested in trying to run together, please send me an email: janie623@gmail.com Enjoy your weekend!

  2. Hi Janie! Yeah, your brother told me some about you. He's really cool. Unfortunately, I missed the sign-ups for the 4-miler. I had family issues come up over the weekend and forgot about it until the monday after and it was already closed. I could have cried. I am trying to get in touch with Molly Fulton to see if I can still get in. Dargan, Alec and my boss, is good friends with her.

I'd still be happy to run with you. What time to you run generally and where?

  3. Hi Casey:) Yeah, Alec's a good guy, he told me your interests seemed to be pretty similar which is always a good thing with co-workers!

I totally understand what you mean about the race closing. Good luck, I hope you are still able to get in. I had to go to Ragged Mtn. last year in order to sign up. This year they had sign ups at the training program, which was really convenient. I haven't been very good about running b/c of the heat lately! I don't have a good spot, I'm such a newbie, I don't know where to go, other than the track, which gets old. Where do you normally run?

Love to hear from you guys!
