This salad is wonderful if you like grapefruit. I am not a grapefruit eater run for the hills when I see grapefruit, and I still enjoyed it (mostly). The whole salad is 234 calories, 4pts, and 4pts+ values. If that isn't a reason to try it, I don't know what is. The recipe is modified from Eating Bird Food recipe here. I made the recipe for Valentine's Day and it was a unique salad I wouldn't normally try for my Salad Week.
What you need:
Salad:
2 cups spinach
1/2 medium grapefruit, sectioned
1 1/2 Tbsp reduced fat feta
8 Walnut halves crushed
1/5 Avocado, cubed
2 1/2 Tbsp dried cranberries
Dressing:
Equal parts balsamic vinegar and fat free Italian Dressing
Love avocado but you lost me at grapefruit
