Sausage Artichoke Soup

Sausage Artichoke Soup Recipe:

This is such a great soup, super easy to make, and two cups is only 5pts! Its a great winter soup, and ciabatta bread goes perfectly with it.

What you need:

1 lb. Sausage (I used regular this time, but next time I am going to try out spicy)
2 14 oz. cans Artichoke Hearts
3 14 oz. cans Diced Itallian Tomatoes
2 tsp Minced Garlic
3/4 tsp Oregano
3/4 tsp Basil
3/4 tsp Italian Seasoning
6 cups Water
Instructions:

Brown and crumble sausage in large skillet.

Drain off excess fat. (I did not subtract points for this.)

Chop artichoke hearts. I like my soup chunky so I didn't chop them a lot.

Add sausage and artichoke hearts to a large pot.

Add all of the rest of the ingredients.

Stir and bring to a boil.

Once boiling, reduce heat and simmer on medium for 20-30 minutes.

And then you're done!!

  1. I'm a new follower of yours...I also did weight watchers and last 31 pounds! I had never tried this recipe but I made it tonight. My husband and I LOVED IT (and he doesn't usually like artichokes).
