Radish, Cucumber, and Prosciutto Salad

This may be my crowning glory as far as recipes go. After meandering through the grocery store, I wound up with some odd items that are far from my staples. Some one was guiding my hand, let me tell you, because from that hodge podge shopping cart, my favorite salad ever was born. ever. I've had it twice since yesterday. It is a whopping 114 calories and 2pts! My magnum opus. You must try.


What you need:
3-4 Romaine leaves, chopped or ripped up
2 Medium radishes, thinly sliced and cut into quarters
5 Slices Cucumber, cut into quarters
.75 oz. Aged prosciutto, diced
.25 oz. or 1 Tbsp, semi soft goat cheese, crumbled
1 tsp Greek Salad Dressing, or some sort of tangy vinegrette, dip your fork in it. Honestly, it almost doesn't need dressing since the goat cheese and prosciutto give it so much flavor.
