Week 14: Day 5

My Friday was not so great. I was sick when I woke up and it lasted pretty much all day. I slept in after getting up the first time and didn't eat breakfast. I had a sore throat and tummy ache. When I finally did wake up, I had lunch of an artichoke 2pts and Smart Ones Fettuccine Alfredo 4pts.

After lunch, I laid on the couch regretting eating and watched The Time Traveler's Wife. It was interesting, but not my favorite. I napped a little longer. I probably would have gone to work today despite feeling sick, but I had my first training day at Learning Rx where I would meet the other cognitive trainers and I wanted to feel better and not sickly when I went. 

At 4:30, Matt came home to give me the car (we're still hobbling on one car) and I went to the first day. All of the other trainers were really great. I was surprised at how qualified everyone was. Most of them have Master's Degrees or are working on them. I felt pretty honored to have been chosen.

When I got home, I made guacamole! Yum! Still a favorite. I had 3pts of chips and guac (about 18 baked tortilla chips w/ 2 Tbsp guac). I ate it because Matt and I had DINNA PLANS with Ramjie and Chris! Love them. We were having a late dinner...I don't think we actually started eating until 9:15!
Guacamole Recipe!!
1 ripe avocado
1/4 cup pico de gallo 
2-3 Tbsp lemon
2 Tbsp cilantro, chopped

Mush up the avocado with a fork, add the other ingredients and stir a lot, then enjoy with baked tortilla chips or on salad!

So for dinner at Jamie and Chris's we had more guacamole! I can't complain because I am currently in love with it. We had guacamole, spinach salad with organic tortilla chips, some grilled halibut and grilled free range (happy) chicken thighs, and grilled portobello mushrooms. Delish- thanks, Chris! I had about 2 cups of salad 4pts, 2 oz. chicken and 1 oz. hallibut 3pts, 1/2 mushroom 0pts, 2 Tbsp coconut milk chocolate ice cream 1pt, and some extra chips 1pt.

After dinner, I started feeling crappy again so we went home and chilled on the couch for a bit and then went to bed. I did start putting together a more "educational" post about vitamins and minerals to share with you guys! Get excited!

  1. I'm you eat artichokes plain? I've never had a fresh one before.

    Bummer on not feeling well, hope you get to feeling tip top shape again!

  2. I do eat artichokes plain, but most of the time I dip the leaves in lemon, or lemon + a little light butter (2/3 tsp butter in 1/8 cup lemon). I steam them. So good!
