9/18/2012: Calculated points plus and nutrition information. Makes 9 cups for 3pts+ and 127 calories per serving. (I used 1 can of corn instead of 2 cups frozen).
What you will need:
2 (4oz.) Chicken Breasts (skinned and boned), cooked on nonstick skillet and cubed
2 cups Frozen Corn, thawed
1 lg. Onion, chopped
2 cloves Garlic, pressed
2 (14 1/2oz) cans Low Sodium, ff Chicken Broth
1 (10 3/4oz) can Tomato Puree
1 (10oz) can Diced Tomatoes and Green Chiles
1 tsp Salt
1 tsp Chili Powder
2 tsp Ground Cumin
1/8 tsp Red Pepper
1/8 tsp Ground Black Pepper
1 bay leaf
Combine all ingredients in a large pot and stir.
Cover and bring to a boil.
Reduce heat and simmer for 30 mins.
An alternative to stovetop is to combine all ingredients in a slow cooker, cover and cook on high 6hrs.
And then you're done!
